INGREDIENTS
2 large cucumbers, sliced but not peeled or deseeded, into 3 mm rounds
120ml white wine vinegar
50g honey
1 teaspoon crushed hot chili

PREPARATION
Put the cucumber in a bowl and combine the vinegar, honey and chilis in a pan and simmer over low heat for 10 minutes. Pour the mixture over the cucumber and place in the fridge to allow the flavours to come together. To serve, arrange on separate plates and scatter more chopped chilis over if desired.
