INGREDIENTS
0.5kg large shrimps
1 ripe avocado
10 cherry tomatoes, cut in half
1 stalk green onion, sliced
1 sprig cilantro, chopped
1 stalk fresh parsley, chopped
3 tablespoons fresh lime juice
1 tablespoon olive oil
1 tablespoon vinegar
salt

PREPARATION
Pour water in a pot and boil it. Add the shrimps and cook for 10 minutes. Set aside. Meanwhile, wash and rinse the fruits and vegetables. Cut the avocado lengthwise in half and remove the seeds. Peel off skin and cut in cubes. In a small bowl, mix together lime juice, olive oil, vinegar, salt and pepper to prepare the dressing. In a salad bowl, place the avocado, tomatoes and shrimps and toss with the dressing until well coated. Add green onion and cilantro and mix gently. Serve warm or cold.
