INGREDIENTS
400g large prawns
225g /8 oz baby spinach
½ avocado, sliced
2 garlic cloves, chopped
1 teaspoon fresh ground pepper
1/2 teaspoon cayenne pepper
1 tablespoon fresh cilantro leaves, chopped
2 teaspoon olive oil
2 tablespoons white wine vinegar

PREPARATION
Pinch the heads off the prawns and put them into a pot with salted boiling water for 5 minutes. Remove prawns, drain, rinse with cold water and devein shell. In a bowl, blend the oil, vinegar, garlic, fresh ground pepper and cayenne pepper. Arrange the prawns in the mixture. Meanwhile, place in a large salad bowl the spinach and avocado. Remove the prawns and add them to the salad bowl. Sprinkle the oil mixture on top and decorate your plate with the cilantro.
