Onion Salad and Goats Cheese
A Spanish salad that can be upgraded for lunch!

This is a fairly unusual Spanish recipe with sweet and moorish onions. The creamy goats cheese sets it off perfectly and it can be served with a crusty loaf to enhance the meal and make it a filling lunch.

INGREDIENTS
red or white onions
200g goats cheese
2 tablespoons chopped fresh parsley
115g black olives, pitted
1 tablespoon sherry vinegar
2 tablespoons red wine vinegar
2 tablespoons olive oil
1 tablespoon water
Salt and pepper

PREPARATION
Bring a large saucepan of lightly salted water to a boil. Add the onions and simmer for 15 minutes or until tender. Drain and set aside until cool enough to handle. Thickly slice the onions and place them in a shallow dish. Sprinkle the parsley and olives over onions and season to taste with pepper. Whisk the vinegars and olive oil together in a bowl, then whisk in enough water to make a dressing. Pour the dressing over the onions and olives and serve at room temperature with crumbled goats cheese.
