INGREDIENTS
300 g boiled for 2 minutes noodles
4 eggs, beaten
2 green peppers, seeds removed, sliced
2 carrots, sliced
10 mushrooms, sliced (water soak for 20 minutes)
1 onion, sliced
2 garlic cloves, chopped
1 lemongrass stalk,
2 tablespoons ginger
4 tablespoons teriyaki sauce
2 tablespoons seed oil
4 eggs, beaten
2 green peppers, seeds removed, sliced
2 carrots, sliced
10 mushrooms, sliced (water soak for 20 minutes)
1 onion, sliced
2 garlic cloves, chopped
1 lemongrass stalk,
2 tablespoons ginger
4 tablespoons teriyaki sauce
2 tablespoons seed oil
PREPARATION
Dressing: Remove outer leaves of lemongrass stalk, slice and mix in a small pan with teriyaki sauce and ginger. Boil, stirring well and let it simmer until well mixed. Set aside.
In a bowl, mix together the eggs, peppers, carrots, mushrooms, onion and garlic. Stir in the teriyaki sauce until well mixed. Heat the oil in a wok over medium heat. Add the egg and vegetable mixture and the cooked-cold noodles, and stir-fry for 3-4 minutes. Place the noodles in bowls and drizzle the dressing on top.
