Lettuce salad with minced meat

INGREDIENTS
  • 1 pound (450 g) lean ground beef, minced
  • 1 head butter lettuce, leaves separated
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bunch scallions (spring onions), chopped
  • 2/3 cup water chestnuts, drained, chopped
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar
PREPARATION
Rinse lettuce leaves without tearing them and pat dry.
Warm the olive oil in a skillet over medium to high heat. Add the minced beef and sauté stirring frequently for about 10 minutes.

Drain and set aside to cool. In the same skillet add the onion, garlic, ginger, soy sauce, vinegar and stir for 3-4 minutes. Add the water chestnuts, green onions and cooked beef. Continue cooking for 4-5 minutes. Remove from heat.

To serve, take 1 lettuce leaf and spoon a portion of minced meat into the centre of the leaf. Wrap the lettuce around filling. Serve on a platter.
