Lamb feta stuffed peppers
Stuffed peppers with a delicious Greek twist!

This is a very traditional Greek recipe that cleverly combines tender lamb, feta cheese and peppers to make a delicious home cooked meal.

INGREDIENTS
35 oz / 1kg ground lamb
2 cups cooked rice
1 cup crumbled feta cheese
1 cup tomato sauce
8 green bell peppers,
1 onion, chopped
1 garlic clove, minced
1 tablespoon olive oil
1 tablespoon fresh lemon juice
2 tablespoons fresh dill, chopped
1 teaspoon white sugar
½ teaspoon ground allspice
½ teaspoon salt
½ teaspoon ground black pepper
1 cup cold water
PREPARATION
Preheat oven to 400°F /200°C. In a skillet, heat the oil over medium heat. Sauté the onion for 4-5 minutes. Stir in the garlic and cook for 1-2 minutes. Cut the stems of the peppers and remove the seeds. In a large bowl, combine sautéed onions, dill, allspice, salt and pepper. Mix in the rice and lamb, and fold in feta cheese. Stuff peppers with the mixtures. Mix tomato sauce with water, lemon juice and sugar and pour over peppers. Cover dish with foil. Bake peppers for 45 minutes. Uncover the dish and bake for a further 15 minutes. Serve hot.
