Herring with Mustard Sauce

Herring is a strong-flavoured oily fish that is enriched with vitamins A and D. With this dish, a little goes a long way as one fish can easily be shared amongst two people. Serve this meal with new potatoes and a tomato salad to garnish.

INGREDIENTS
4 fresh herring
1 onion finely chopped
25g butter
12g flour
1 teaspoon dried mustard powder
50ml vinegar
150ml water

PREPARATION
Remove the heads of the fish and score the flesh. Season and place under the grill for 10–15 minutes turning once half-way through cooking. Meanwhile, make the mustard sauce by sautéing the finely diced onion in butter until softened. Add the flour and mustard. Slowly add the water and vinegar and bring to boil. Simmer very gently for 15 minutes. Arrange herring on a serving dish and serve sauce separately.
