INGREDIENTS
1 cauliflower
3 tomatoes cut into pieces
1 cup cottage cheese
1 onion, chopped
1 stalk fresh parsley, chopped
1 tablespoon olive oil

PREPARATION
Wash the cauliflower and remove the outer leaves. In a saucepan, add water up to the middle and place the cauliflower inside once the water has boiled. Cook for 10-15 minutes. Add the tomatoes, onion, olive oil, salt and pepper in a blender and boil the mixture for 5 minutes. A few seconds before you remove the mixture from the heat, add parsley. Pour the tomato sauce evenly over the cauliflower and sprinkle the cottage cheese on top.
