INGREDIENTS
4 fillet steaks, about 140g each
1 tablespoon coriander seeds
1 tablespoon cumin powder
2 teaspoons garlic flakes
1 tablespoon olive oil
1 tablespoon salt
1 tablespoon black pepper

PREPARATION
Preheat oven to 200°C (400°F). Rinse the meat, pat dry and trim any fat or sinew. In a bowl, mix the coriander seeds, cumin powder, garlic flakes, salt and pepper and coat the fillets. Pour the olive oil in a large pan and place the fillets in it. Turn up the heat to high and roast the meat for 3 minutes on each side (for rare cooked meat-3 minutes, for medium cooked meat-4 minutes, and for well done meat - 5 minutes). Remove from the pan using forceps rather than fork so as not to drill the meat allowing it to keep its juice. Place on a baking tray and roast (about 30-35 minutes for rare meat, 40-45 minutes for medium-cooked meat and 50-55 minutes for well done meat). Cut the beef fillets in thick slices and serve warm.
