INGREDIENTS
4 chicken breasts / thighs / legs, skinned & boned (120-150g each)
1 onion, chopped
1 garlic clove, chopped
1 lemon, sliced
1 teaspoon thyme
1 teaspoon cumin
1 tablespoon olive oil
1⁄2 cup fresh lemon juice
½ teaspoon salt
½ teaspoon pepper

PREPARATION
Preheat oven to 200°C (375°F). Rinse the chicken and pat dry. Mix the olive oil, lemon juice, onion, thyme, cumin, salt and pepper in a bowl. Brush chicken with the mixture. Rub the surface of baking dish with garlic and leave it in the dish. Arrange chicken in the baking dish in a single layer. Sprinkle the olive oil over the chicken into the baking dish. Bake for about 30 minutes or longer until it is cooked thoroughly, turning once or twice. Place chicken onto plates and garnish with lemon slices.
