Feeling a little down? This colourful salad is able to liven up even the dreariest of days. It's important to remember that you must consume it as soon as possible as the avocado turns brown very quickly.

INGREDIENTS
1 tablespoon soft dark brown sugar
4 tablespoons water
75ml lime juice
500g cooked chicken, shredded
1 medium mango, peeled, seeded and diced
1 avocado, peeled, pitted and diced
285g mixed leaves
Chilli sauce (for desired flavor)

PREPARATION
In a saucepan and over medium-high heat, stir the soft dark brown sugar and water together. Bring to a boil. Pour contents into a medium-sized bowl. Stir in the garlic chilli sauce and lime juice. Set the dressing aside. In a large bowl, toss the chicken, mango and avocado together. Arrange the salad mix on serving plates, then top with a few spoonfuls of the chicken mixture. Pour the dressing on top.
