INGREDIENTS
8 artichokes
8 cherry tomatoes or 2 ripe tomatoes
120g fresh goat cheese, softened
2 carrots
2 zucchini
20 olives
1 onion, chopped
1 teaspoon chopped thyme
1 teaspoon salt
2 tablespoons olive oil

PREPARATION
Preheat the oven to 350°C. In a bowl, blend the goat cheese with the thyme using a wooden spoon and season with salt. Pour 1 inch of olive oil into a tall 1-gallon glass container. Layer the cheese balls, artichoke hearts, cherry tomatoes and olives in the container with enough of the remaining olive oil to cover. Let the ingredients marinate at room temperature for 24 hours. Serve with a toasted baguette.
