A truly delicious combination of flavour and colour. Simple but impressive, this dish is prepared quickly and with little hassle, so have your salad ready-made before starting.

INGREDIENTS
1 ready prepared whole trout
25g butter
Juice of half an orange
1 half orange sliced
Freshly ground black pepper
Salt

PREPARATION
Melt butter in heavy bottomed pan. Fry fish turning once after about 3 minutes. Fry for a further 3 minutes. Turn heat down, add orange juice and orange slices and place a lid on the pan and simmer for a further 5 minutes. Check fish is cooked through. Season well and serve immediately.
