INGREDIENTS
6 eggs
6 fresh mushrooms, sliced
1 onion, chopped
2 tablespoons fresh parsley, chopped
1 tablespoon butter or margarine
1 teaspoon caraway
salt
pepper

PREPARATION
Break eggs and lightly whisk together whilst adding salt, pepper and onion in a bowl. Heat half tablespoon of the butter in a pan and add the mushrooms. After 2-3 minutes remove and keep aside.
Melt the remaining butter in a non stick pan over medium heat. Spread the beaten eggs evenly and sprinkle on top the mushrooms, parsley and caraway. When one side is cooked slowly fold the omelette into half with a wooden spoon. Serve hot.
