Okra with Tomatoes and Cheese

This recipe tastes its finest if made with fresh ingredients however canned tomatoes can also be used as all the flavor is preserved since the vegetable was picked at its ripest.

INGREDIENTS
500 g / 1 pound okra, chopped
4 medium tomatoes / 28-ounce can stewed tomatoes, chopped
120 g feta cheese
1 onion, chopped
½ can tomato juice
1 tablespoon olive oil
1/2 teaspoon salt
1/3 teaspoon pepper
1 glass water

 

PREPARATION
Wash the okra and leave it in a tray to dry. Cut the stalks and put them in a deep pot. Sprinkle with vinegar and leave for half an hour. Pour the oil in a pot over medium-low heat. Add the okra and onion and stir fry until onion turns light brown (approx.4-5 minutes) whilst stirring occasionally. Add the tomatoes, juice and water. Reduce heat to simmer until okra is tender (depending on the size and type of okra). Be careful not to mix as the okra could dissolve. Season with salt and pepper and serve with the idealy-suited-for-this-dish; feta cheese.
