Moroccan Spiced Chicken Breasts

These zingy chicken fillets are popular in the warm Mediterranean countries and, while they need marinating overnight, the actual cooking time takes a matter of minutes. Enjoy as a BBQ recipe too!

INGREDIENTS
2 tablespoons low-fat natural and plain yogurt
1 tablespoon chopped coriander
1 tablespoon olive oil
2 garlic cloves, minced
1 ½ teaspoons paprika
1 ½ teaspoons ground cumin
½ teaspoon freshly ground black pepper
4 skinless, boneless chicken breasts
PREPARATION
Mix the marinade ingredients (yogurt, coriander, olive oil, garlic, paprika, cumin) together in a medium sized bowl. Add the chicken pieces to the bowl and thoroughly coat with the marinade. Cover and chill in the refrigerator for 6 - 10 hours overnight. Heat your grill to high heat, or prepare coals for direct heat if you are using charcoal. Grill the chicken breasts for a few minutes on each side, until cooked through. Take care not to overcook. Serve sliced on salad or with vegetables for a more substantial meal.
