INGREDIENTS
1 chicken breast boneless, skinless, thinly sliced
1 green pepper, chopped
1 cucumber, length sliced
6 mushrooms, sliced
2 small to medium carrots, sliced
1 onion, sliced
450ml. fresh chicken stock or coconut milk
2 tablespoon lime juice
250 ml red curry sauce
PREPARATION
In a non-stick skillet pour the lime juice and fresh chicken stock or coconut milk. Add the pepper, carrots, onion and mushrooms. Stir-fry for 5 minutes at medium-high heat. Add curry sauce and chicken.

Stir to coat chicken and vegetables evenly. Cook for approximately 8-10 minutes if chicken is thinly sliced, or a bit longer if it is a bit chunky. Serve cucumber raw on the side.
