INGREDIENTS
200g canned (no salt, spring water only) chickpeas
2 tablespoons lemon juice
2 garlic cloves, crushed
1 teaspoon ground cumin
100ml tahini (sesame seed paste) optional
4 tablespoons water
2 tablespoons extra virgin olive oil
1 teaspoon paprika, smoked or sweet

PREPARATION
Drain the chickpeas and rinse. Whizz the chickpeas, lemon juice, garlic, cumin, salt, tahini, and water in a food processor, and blend to a creamy purée. Add more lemon juice, garlic and cumin to prefered taste. Turn out onto a dish. Drizzle with extra virgin olive oil and scatter with the reserved chickpeas.
Sprinkle with paprika and serve.
