Hot Macaroni Salad
A flexible dish with a leftover twist!

This dish is super flexible as it can be eaten hot or cold. What more? Any leftover can be refrigerated and consumed the following day with a few extra olives and some crusty bread. Yum!

Servings: 4
INGREDIENTS
2 large onions
2 large red peppers
1 garlic clove
Olive oil
A good handful of cherry tomatoes
Olives of choice
Fresh chopped basil
Seasoning to taste
225g cooked macaroni

PREPARATION
Sauté onions, peppers and garlic in oil until they soften. Add tomatoes. Place all ingredients in a large bowl. Stir through and serve with a salad of tender green leaves.
