INGREDIENTS
4 large zucchini
1 pound /500g minced meat
1 cup tomato juice
1 onion, chopped
2 garlic cloves, chopped
2 sprigs parsley, minced
1 sprig dill, minced
1 tablespoon olive oil
1/2 teaspoon salt
1 pinch ground pepper

PREPARATION
Wash the zucchini and discard the outer layers. Place the cleaned zucchini in a bowl.
Pour oil in a skillet and sauté the onions for 2-3 minutes. Add the minced meat and sauté together for 5 minutes, stirring occasionally. Add the tomato juice, garlic, parsley, dill, salt and pepper. Stir with a spoon and let it boil for about 10 minutes.
Preheat the oven to 400°F / 200°C. Remove the skillet from the heat and fill the zucchini with the minced meat. Arrange the zucchini in a pan, one beside the other, and bake in the oven for 40-45 minutes.
