Aromatic Lamb Recipe

If you're craving a savoury, tender and flavorful lamb dish then this is your go-to recipe.

INGREDIENTS
1 leg of lamb, 6 pounds/2.5 kg
3 pounds / 1.5 kg small potatoes, peeled, sliced
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon dried oregano
1 tablespoon honey
1 tablespoon olive oil
½ teaspoon sea salt
½ teaspoon black pepper
PREPARATION
Combine 1 tablespoon of oil, honey, rosemary, thyme, oregano, salt and pepper in a bowl and whisk together. Brush the mixture liberally over lamb until it is fully coated. Cover and refrigerate for 4-5 hours. Preheat oven to 400°F/200°C. Remove lamb from refrigerator and allow it to come to room temperature for 30 minutes. Meanwhile toss potatoes with the remaining 1 tablespoon of oil. Place the lamb in a roasting pan and arrange the potatoes around it. Bake for about 60-90 minutes. Remove from oven and allow it to rest for 10 minutes before slicing and serving the dish.
